The Food Protection Program of the Arkansas Department of Health (ADH) inspects all food establishments in the state to make sure they follow ADH Food Establishments Rules & Regulations. Arkansas Health Department's inspections are conducted 1 to 3 times per year depending upon the Risk Category of the establishment. OBSERVED: (1) --The PERSON IN CHARGE shall demonstrate to the REGULATORY AUTHORITY knowledge of foodborne disease prevention, application of the HAZARD Analysis CRITICAL CONTROL POINT principles, and the requirements of the Rules and Regulations Pertaining to Food Establishments. (2) All cold holding equipment shall be able to hold and maintain all cold held TCS foods at or below 41 degrees F.
